Are than any known to exist, and if not, how hard would it be to make one?

Yes, the z64, though they are hard to come by, and quite expensive. I don't know if you would call it a 'flash cart' though, it is more of a back up device.

It depends on how much experience you have with electronics.

Ah, yes, I remember the z64. A friend of mine had one but traded it for $10

When I used to do N64 games, we used flash cartridges for testing on real consoles. Here is a (poor) picture of the one I still have, along with a DS flash cartridge:

That's cool.

Any chance you can open the case and take a close up photo of the PCB ?

BTW is it USB ?

I'll take some pics today and post, and no, it is not USB. To program the thing, you need to use the Nintendo Gang Writer (if I remember correctly it would program 7 flash carts at a time).

I couldn't find my gang writer anywhere... it is probably packed in some box in the garage.

Yeah, that's the one I was going to mention. I have their genesis flash cart (the neo myth MD) and it's great. Dunno when we can expect to see production though.
