You have to block some. Others go in a wavy pattern you can walk by to avoid. When blocking, hold two or three of the buttons down to perform a "faultless defense". This is denoted by a circular green aura that rotates around your character. This uses your tension gauge but negates block damage and it also pushes the opponent away slightly. Sit in practice mode and learn combos for whatever character you plan on playing through the game with. Learn the super moves as well, then learn how to link a combo you are familiar with into a super move for a lot of damage. Sol or Ky are the easiest characters to play through the game with, for beginners. I'd recommend switching to either of those (not Robo Ky).
