    Just got back from Paul Prudhomme's old restaurant. I watched the PBS show as a kid, and always wanted to go. Food coma. So good. Big doggy bags.

      Tonight I had possibly the single best potato I've ever eaten.

      Yummy. Was it a baked potato? He makes Cajun/Creole food?

      It seemed to have started life as a baked potato, had its guts ripped out in large chunks, and combined with a smooth but slightly spicy sauce and what I believe may have been cracklins.
