Here, I fixed your Mario gif. All it needed was for one duplicate frame to be removed. This particular Mario only needs 3 frames to walk forward.

Lubricate your N64 control sticks. I use a silicon based lube personally (haven't noticed any nasty side-effects yet)

I use AppleWin and I can't ever get the controls to work properly. Gremlins is especially bad for that on emulators in general I find. Though as I recall, I don't think it was ever an easy to control game even on the original hardware. But hey at least I could play it well.
