I have the opportunity to pick up a fairly decent Soul Calibur III arcade cabinet from a local arcade for about $500. From what I read, it should be fairly easy to convert to a MAME cabinet, but I need to do some more research before I decide.

  Indeed! I'd either leave it dedicated or (more than likely pass) and just get a cheap cab for converting. Last SFII I bought, paid $25 for it... and it worked! lol well mostly, but that was a lucky score. Should be able to get a fairly generic arcade cab for $50-$100 though. Just get some hole saw bits for your drill if you need to add buttons and joysticks.
