With the uploads transferred through my dropbox link, I check that the dumps are not bad and of a reasonable flux level. I am no expert but the dumps I transfer are of acceptable levels. In terms of which dumps works with what version of TOS, a preservation dump doesn't care as it is a raw capture and matches whatever the original disk worked with. It would be better if other supported preservation, as you say, someone must have originals for games like Son Shu Shi and Jinks. With Greaseweazle, Supercard Pro and Kryoflux, the process of dumping disks is now easier.

Works and looks great. Downside, these have to be built ATM so you need good soldering skills. Until someone starts selling them assembled probably not an option for most users. You do still need to socket the Shifter chip (if not already there) and connect the HSYNC and VSYNC to the shifter adatper.

I did this and you need to use a blank MSA or ST disk image and in TOS you need to use the disk Format option which will allow you to set a Label on each of the disks before you copy the files to it. The installer checks each disks label to ensure you have the correct disk in the drive as the installation runs.

Yes, ST version has talking too as it uses the YM chip which is in all ST computers.

http://www.happydaze.se/scummvm-lite-atari/ This does have sound support through the ST Yamaha YM chip and even the characters talking. Press F5 brings up some options and you can choose. I have played these games on my ST and have sound and music working through the YM chip. I have also used a MT32-pi to output the music and this sounds excellent.

You may find that the ePROMS for using 2 chip TOS is a bit more complicated than just burning them. 2 chip TOS is 28 pin and programmable chips in 28 pin format no longer exist. There are 2 options: 1. convert the Atari to 6 chip TOS ROMs (which do exist) or 2. use 32 pin chips and follow guidlines for using 32 pin ROMs in 28 pin socket. All of this information is available on the various Atari forums.

The key with Floppy emulators is that you will need either FlashFloppy or HxC firmware installed on them to use them with an Atari computer. There are guides out there on updating a standard Gotek device to install the FlashFloppy firmware and HxC is updated by purchasing a license to update the device. If you can find one pre-loaded with either firmware then you usually pay a premium on the price. Any floppy emulator withour these firmwares will struggle to work with an Atari computer.

I had the same issue. From further installing, I found that installing Neodesk first and then installing Geneva worked. Geneva installation asks for the location of Neodesk and sets it to start automatically after Geneva has loaded.

Papyrus was available on an Atari ST Review magazine issue 28 cover disk. I have this available as an MSA floppy disk on my website: http://www.chillichai.com/atari-st-review Hope this helps. The MSA disks can be downloaded and you can either use an Atari ST MSA program to re-create the disk or use HxC Emulator on a windows computer to open the MSA file and extract the files manually to a folder or floppy disk.
