Did any game console ever use the 8086/8088 processor? Can't think of any off hand.

  I think the Odyssey2 used a similar processor chip, I could be wrong...

  The Odyssey^2 uses an Intel chip indeed, but the 8048 microcontroller is quite far from the 8086 CPU. Actually a 8080 would be a closer match to the X86, and a custom variant of the 8080 can be found as nearby as the Nintendo Game Boy.
