I acquire to play—so, no boxed game in my possession stays boxed for long—but I do prefer to have the box, manual, and other materials, as they go a long way in re-creating those days of yore. However, a box is not a sine qua non, and I'm getting to the point that most of the VCS games I still want are going to be harder to get “complete”.

Each set of paddle controllers is a pair whose cords join together to plug into a single controller port. Since the 2600 has two controller ports, four-player paddle games are possible.
The Warlords suggestion is good. I would add Video Olympics, which also includes some four-player games and has a greater number and breadth of gameplay variations.

Not a character per se, but it was part of the playfield in Video Pinball.

A mascot is supposed to promote whatever it represents. From a 2600 perspective, at least, Pac-Man would generally conjure feelings headed 180° from the right direction.

That's how it works for all of them. Multiload games ought to be encoded over multiple tracks; so, choose the appropriate track and play it.

I had similar thoughts a couple of Christmases ago when I attended a party thrown by someone with one of these projector TVs throwing images against a blank wall. No games were played, but man, Troops (from the DVD accompanying the first issue of Total Movie magazine) has never looked more awesome. I've had a lot of fun speculating what VCS games would benefit most from the supermagnification. (Not as much fun, I am sure, as if I actually played them that way. I'm going to have to get invited back...)

The wraparound river is indeed controlled by the difficulty switches, as explained in the manuals for both the Parker Brothers cartridge and the Starpath SuperCharger release.
Unless, of course, the difficulty switches are on the front of your system.
