Thomas Jentzsch
Gunfight is for one or two players. I play the one player variation all the time. How could I forget the AI which has been described as "brilliant" in several reviews.

Ferret75
Backgammon is annoyingly two-player only. I just got the game, mainly because I wanted to learn about the game, plus I got it cheap.
Shawn
Outlaw has a one player option also. The target mode where the bullseye goes up and down on the other side of the screen and the player shoots at it. So outlaw is a one player game. No, that one is 1 player also, you just play against the computer. Check out the manual.
