Epyx 500xj controller with 7800?

Does it have two separate fire buttons? If so, it should work!

yes but there are no resistors and the pin out seems to be a little different

Of course, just take the cord from a 7800 controller, while you're at it, take the resistors too.

I did this with a Sega Master System Xj500. It's my current favorite 7800 Joystick.

I did the same modification. The switch on the side of the 500XJ (rapid fire, I think?) doesn't work, but otherwise it's a perfectly good 7800 controller. I still prefer my modified RSI controllers, though.
