The reason that an RGB-modded NES doesn't is because you are replacing the video chip with one that has a different pallette. Between RF, composite, s-video, and RGB, the color should not change, and if it does, it's a side-effect of the crappy video quality of the first two. What's the context? Are you actually talking about systems that have palettes in other native color space other than RGB? AFAIK the SMS can display more colors on screen, but I don't know that it has some awesome colors that the NES is not capable of displaying.
