Changing Bios menu on Ultimate 1MB

This is what my Ultimate 1MB looks like..... (Pic 2) I assume it is written for PAL, and I am NTSC, thus the reason for the crop at top and bottom. Is there a way to switch to NTSC? Also, Pic 1 is my virtual 1MB running in Altira. How do I get that menu on my REAL U1MB instead of the one in Pic 1???

Also which board do you have? Is it a Candle version 1 board or a Lotharek Board?

Looks like a white (Lotharek) board from his other photos, so he can safely upgrade.
