Snoopy is a personal favorite of mine. Not easy as such, and with some extremely lush visuals.

The harder variations of Big Bird's Egg catch can be quite entertaining. I have heard that Oscar's trach can race is the same way, but I have never tried it.

Another vote for Snoopy and the Red Baron. Like any other good Atari 2600 game, if the game seems too easy, just try a different variation.

 

Pigs in Space is fun, too, but not for extended play like Snoopy is. Multi-game games (like Pigs in Space or arcade Tron) are fun for a bit, but if you're not a fan of one of the segments, it makes the experience drag every time you have to play it.
