Pointers to data?

If I wanted to assign the addresses of the start point of a data table (e.g. sprite graphics or colors) to a variable, can I do this? Is it just a matter of declaring the variable and assigning the label name to it? Would my variable need to be two bytes to hold the ROM address, then? Are there any special considerations or gotchas to consider?

 

Sorry for all of the questions - I am still getting the hang of things.

 

For what it's worth, I think my little learning project is going to end up being a fruit-smashing game.
