  1. Is there such a thing as a multi game mame board? Something that I can build a cabinet around and simply plug into a monitor and controllers? I googled but I'm unsure of what I'm finding...

      I think most people looking for that are probably going to use a Raspberry Pi.  It can be just the board running the software, so you don't need an expensive case etc.  Just gotta keep the chips cool (just like any board).

       

      I've never done it because I have so many old computers that can run MAME that I just haven't bothered with RPi.

      I know what you mean. But the answer is really any PC motherboard or R-Pi. I seem to recall there are Jamma adapters for those too of course.
