That is how I learned BASIC (and Extended BASIC) and there are lots of examples -- each builds upon the previous. Some of the commands (e.g. string manipulation, math functions) are the same as in Level II on the TRS-80 series, so those texts would be of some value as a reference. I never really did much with the "high-resolution" graphics modes, so I cannot really comment about them. While the original manuals do not seem to be there, many other reference books are available online: http://www.colorcomputerarchive.com/coco/Documents/Books/ For the record, my one major Coco program was a Centipede-clone (cleverly called "Multipede") that used the text screen graphics. BASIC was aided by two different machine-language routines (both borrowed from other sources).
